Sunday Fire Eggs in Tomato Sauce

What you need:

 

  • 2–4 farm fresh eggs
     
  • 1–2 cups tomato sauce (simple, not sweet)
     
  • 2–3 garlic cloves (sliced)
     
  • Olive oil
     
  • Salt
     
  • Black pepper
     

Optional:

  • Chili flakes
     
  • Fresh herbs (parsley or basil)


  • Feta Cheese
     
  • Crusty bread
     

Directions:

Step 1: Preheat the pizza oven

 Bring oven to:


  • 600–700°F
     

👉 Then let it drop slightly before cooking


You’re aiming for 450–500°F cooking zone

 

Step 2: Build the sauce

 

Place cast iron skillet in oven for 2–3 minutes.


Remove and add:


  • Olive oil
     
  • Garlic
     

Let it sizzle briefly, then add tomato sauce.


Return to oven for 5–10 minutes until:


  • Sauce is hot
     
  • Slightly bubbling
     
  • Edges just starting to char
     

Step 3: Add the eggs


 Pull skillet out. (Get some really good gloves - it is going to be hot.)


Crack eggs directly into the sauce.


Season lightly with:


  • Salt
     
  • Pepper
     
  • Chili flakes (optional)


     

Step 4: Cook (rotate often)

 Place skillet in oven.


  • Rotate every few minutes
     
  • Cook ~ 5 - 8 minutes
     

👉 Watch closely —pizza ovens cook FAST.  Wear gloves!


Done when:


  • Whites are set
     
  • Yolks still soft
     


Step 5: Finish


Top with: 


  • Light drizzle olive oil
     
  • Fresh herbs


  • Feta Cheese
     


Serve immediately with bread.
