Sunday Fire Peach Cobbler

What you need:


  • 6–8 ripe peaches (or ~4 cups sliced)
     
  • 1/2 cup sugar
     
  • 1/4 cup brown sugar
     
  • 1 tsp cinnamon
     
  • 1 tsp vanilla
     
  • 1 tbsp lemon juice
     
  • 1/2 cup butter


 

Batter:

  • 1 cup flour
     
  • 1 cup sugar
     
  • 1 cup milk
     
  • 1 tsp baking powder
     
  • Pinch of salt

     

Directions:

Step 1: Fire roast the peaches

 Place sliced peaches directly on the Santa Maria over medium heat.

  • 2–3 minutes per side
     
  • Light char, slight caramelization
    This is where the flavor starts


 

Step 2: Build the Filling

 Transfer peaches to a bowl and toss with:


  • sugar
     
  • brown sugar
     
  • cinnamon
     
  • vanilla
     
  • lemon juice
     

Let sit 10–15 minutes.


 

Step 3: Set up the Dutch Oven

Place Dutch oven on Santa Maria (or over coals).


Add butter and melt completely.


 

Step 4: Make Batter

 

Mix:

  • flour
     
  • sugar
     
  • baking powder
     
  • salt
     
  • milk
     

Pour batter directly into melted butter.

👉 Do NOT stir


 

Step 5: Add Peaches

 

Spoon peaches and juices over the batter.


👉 Don’t mix—this creates the crust
 

Step 6: Cook (top + bottom heat)

 

  • Place Dutch oven over indirect heat
     
  • Add coals to the lid for top heat
     

Target: ~350°F


Cook 40–50 minutes until:

  • Golden brown top
     
  • Bubbling edges
     
  • Set center


Step 7: Rest


Let sit 10–15 minutes before serving.
 

Best served with vanilla ice cream
