Sunday Fire Wood-Fired Chicken

What you need:

  • Bone-in, skin-on chicken thighs (or quarters)
     
  • Bell peppers
     
  • Cherry tomatoes
     
  • Red onion
     
  • Garlic cloves
     
  • Olive oil
     
  • Sunday Fire Original Rub (or salt, pepper, garlic, chili)
     
  • Lemon
     

Directions:

Step 1: Preheat the pizza oven

 Bring oven to:


  • 600–700°F
     

👉 Then let it drop slightly before cooking


You’re aiming for 450–500°F cooking zone

 

Step 2: Season

 

 Chicken:

  • Light oil
     
  • Generous rub
     

Vegetables:


  • Toss with olive oil + salt

     

Step 3: Cast iron setup


Use a cast iron skillet.


Add:


  • Chicken (skin side up)
     
  • Surround with vegetables
     
  • Whole garlic cloves

     

Step 4: Cook (rotate often)

 Place skillet in oven.


  • Rotate every 3–5 minutes
     
  • Cook ~20–30 minutes
     

👉 Watch the heat—pizza ovens cook FAST.  Wear gloves!


Done when: 


  • Chicken internal temp: 175°F
     
  • Skin crisp and blistered
     
  • Vegetables slightly charred
     


Step 5: Finish


 Squeeze fresh lemon over everything.


Optional:

  • Light drizzle olive oil
     
  • Fresh herbs
     

Serve right out of the skillet.  


Have crusty bread on hand to sop up the juices.
